Philokalia is a boutique natural winery in Bethlehem, Palestine, founded by Sari Khoury, a wine thinker guided by imagination, responsibility, and authenticity. We are dedicated to preserving 10,000 years of Palestinian winemaking history and agricultural heritage. Through ancestral viticulture and ancient methods, we craft "thought wine - wine thought" using indigenous grapes like Hamdani, Jandali, Zeini, and Bitouni. Alongside other premier makers like Ashkar Winery, Domaine Kassis, Taybeh Winery, and Cremisan, we represent the peak of Palestinian viticulture, focusing on handcrafted, minimal intervention ancient wines and traditional Baal farming.
